foreclosure eviction timeline question

My condo was foreclosed on Thursday April 17th, 2008 in Portland, Maine. It is now an REO property. I was told that after this sale, eviction proceedings would be started against me and legally the sheriff or process server would show up at my door giving me as little as 48 hours notice to vacate the premises. I was also told that the eviction proceedings could be started immediately or sometime in the future, all very vague.
This info has been in line with everything I've read and researched about the process of foreclosure and eviction.
I began selling the appliances for much needed funds about 3 weeks ago. I’ve found a contractor who patiently and with care removes them. I am NOT destroying the property and taking great pains to calk/paint where there was hardware in a wall. I have no intention of taking out the cabinets, bath stuff, light fixtures, etc. I’m selling the refrigerator, stove, microwave, dishwasher, Rinnai gas heater, this leaves 3 electric baseboard heaters remaining.
Yesterday a woman came to my door with a cash for keys offer to pay me $500 for the move to my next place if I leave on May 13th, 2008. I did not sign it then, I’d never heard of this type of thing nor had I been given any advice or heads up that this could be an option.
Here are the questions that are running through my head now that I've done the research about what this agreement is:
Why do I need to sign the agreement in her presence and why do they require my SS# on it?
If I sign the paper knowing that I'll not get the $500 due to appliance removal, can I be penalized because I agreed to this item line:
"7. Occupants acknowledge they no longer have any claim to possession of the above property nor any possessory right therein, nor any claim to any property remaining therein."
Is it worth signing the agreement to have the knowledge of the 5/13/08 leaving date?
Some of the research I've done has implied that it takes some time to evict someone, even after the foreclosure is complete. In my head I thought they'd be here in only a few days. So, if I do not sign the agreement and the bank who now owns the property starts eviction proceedings will I have a bit more time than 3 weeks?
